The system is designed to work that way. Well, you can't just not suicide, you have to maximize your options, list every house you preffed at. That way, if you're not high enough on bid lists for any of your three, you're eligible to be added back to your #1 choice as a quota addition or whatever it's called.

Suicides if you only put 1 sorority down and 0 alternatives so basically if they don't want you you're not in a sorority at all

No, your chances of getting a bid are basically the same whether you pref at one, two, or three houses as long as you list ALL of them and don't leave any out. So if you preffed at AB, CD, and FG, you can't just list CD and FG because you don't like AB. If you just preffed at CD, then you just need to list CD. If you aren't high enough on their bid list you will probably be a quota addition.
It's possible to come out of that situation without a bid but not likely. There is a whole system set up to make sure that doesn't happen to people who maximize their options.
