how do you know if a sorority is interested in you? does this include many friend requests or is it more serious like messaging? what sororities do this the most

Honestly, there is no way to know without having hundreds of girls reading too much into things!

We can't message you, so that's out. Some sororities can't send you a friend request unless they personally know you so that's also out.
You really won't know. And even if they are interested in you, you aren't guaranteed a bid from that sorority.
Don't over read everything. Just take a deep breath and get ready for the best week ever!
