I heard they gave snap bids today? Is this true...............?

Yes they did... I think it was around 10 snap bids or so.

From an older sorority gal...Hate to ask, but what is a snap bid? Like a do over?? And is that because you didn't meet your quota and that's the way to do it??

Yea - PNMs are only eligible for snap bids if they weren't offered a bid at another house (so you can't go to bid day at house X, decide you aren't feeling it, and get a snap/continuous open bid from house Y within the same recruitment year)
