I'm interested in rushing either this spring or next fall Pi Phi, AEPhi and AXO as those seem the most realistic for me. What kind of girls do they usually go for and is it hard to get a bid from these three sororities?

All of those sororities have great down to earth girls! I'd recommend going through spring recruitment cause its usually not as overwhelming and theres less pressure. Just be yourself and you should be able to get a bid from at least one.
