frat bids...

Anyone know which frat is the toughest to get a bid from? How many is a typical pledge class for each?

Sig Chi is the most selective fraternity followed by SAE. Most others bid everyone.

Everyone has specific standards but I know Sig Ep will pretty much give a bid out to anybody.

Beware those fraternities that bid everyone. Visit each fraternity to see which is the best fit for both. Some are harder to get into, but you just have to make an effort. Others will give you a bid just because you show up.
