What are those sororities like and how hard is it to actually get a bid. From previous posts it almost seems impossible.

You have your answer then. If you don't fit the exact mold they're looking for, whatever that is, you won't get a bid... even though they promise it to you on pref day.

I don't think it's hard. You just have to have a good personality. You'll go where you belong, if you're outgoing and carry yourself well, then you should be fine
